Mixology Monday - Lemoncello Mint Spritzer

This month's Mixology Monday is being hosted by Kaiser Penguin and the theme is Mint. My usual favourite drink with mint is the Mojito, but I wanted to try something a little different this time. Apparently I don't do 'different' well, since the drink I ended up making is almost the same as the Mojito. The Lemoncello Mint Spritzer uses an insanely sweet Italian liquer called Lemoncello, as well as mint, a bit of lemon juice and a splash of Club Soda. It is a refreshing summer drink that is almost lemonade with a kick. The original recipe came from the show Everyday Italian, and Giada made her own Limoncello on the show, using limes instead of lemons. I didn't have 3 months to age the stuff, so I drove into the nearest city to get myself a bottle of the traditional lemon based Lemoncello.

Lemoncello Mint Spritzer. 4 oz Lemoncello liquer Club Soda splash of lemon juice/twist of lemon several mint leaves (about 1/4 cup) ice, lightly crushed Add mint leaves to a cocktail shaker, add lemon juice and muddle lightly. Add Lemoncello liquer and ice and shake 'til chilled. Fine strain into a collins glass with fresh ice and top with club soda. Garnish with a mint sprig and lemon wheel.
