In between travelling and general summer busy-ness, I did manage to stop by my uncle's birthday party and get photos and recipe for these Summer Berry Tarts.
Summer Berry Tarts are very simple, but taste really good and refreshing. And in 48 degree celsius (118 F) weather, refreshing is important. The berries you use can be anything in season, or your favourite frozen berries. Here in Ontario, blueberries are in season along with some late raspberries. Strawberries and blackberries would work really well, and even sweet cherries would taste great.
Summer Berry Tarts.
Makes 8 tarts (recipe double easily)
About 15 minutes prep, 1 hour chilling time
8 frozen or homemade tart sized pastry shells, baked
8 oz cream cheese, softened
1 cup sugar
1/3 cup lime juice
1/3 cup fresh or frozen blueberries (thawed & drained)
1/3 cup fresh or frozen raspberries (thawed & drained)
Bake tarts according to package directions, or use your favourite recipe.
Beat cream cheese until light and fluffy. Gradually add sugar and lime juice, beating continually until smooth (an electric mixer works well for this), about 3 minutes.
Spoon cream cheese mixture into cooled shells, filling about 2/3 full. Arrange fresh berries over filling and chill for an hour - NOTE: if using frozen berries, arrange onto filling immediately before serving.
