So here's an easy recipe for pork chops that I'm sure I haven't blogged yet. There are only 6 ingredients (5 if you leave out the olive oil), browning the chops is optional, and it can be cooked either in the oven or in the crockpot. My kind of recipe.
The pork chops that I use are cut from a big piece of sale pork loin (except I see in the pictures I've picked that these are not those chops - another sale package of bone in version). I sometimes butterfly the pork chops, and sometimes just slice them. These chops got cut a little thin, so this seemed to be the easiest way to cook them. I thickened the sauce at the end, and served with plain rice and a salad.
A note about the lemon: this recipe, simple as it is, really needs a real lemon. Lemon juice just doesn't seem to work as well. Try it if you want to, but I've found that lemon slices really do work the best here.
Easy Pork Chops (oven or crockpot)
serves 4
1.5 hours in 350 degree oven, 6 to 8 hours in crockpot on low
1/3 cup ketchup
1/3 cup brown sugar
1/3 cup water (1/4 cup if using the crockpot)
1 tsp. Olive Oil
1 lemon, washed well and thinly sliced
4 pork chops, big enough to feed the appetites in your house
The REALLY easy method: mix the first four ingredients in a bowl. Put the pork chops in a roaster or in the crockpot (spray first with cooking spray - makes for much easier cleanup), pour sauce over top, lay lemon slices over the pork chops, bake/cook until done. That would be about 1 1/2 hours in the oven at 350 degrees, or 6 to 8 hours on low in the crockpot.
NOTE: The sauce is thin. It's still yummy over rice or noodles or potatoes. However, if thin sauce is not your thing, feel free to thicken it with a slurry of cornstarch and water.
Slightly more work method: Season the pork chops with salt and pepper. Brown in very hot oil to sear, then continue on as per the really easy pork chop method, cutting down the cooking time by about 30 minutes for the oven, and about 1 hour for the crockpot/slowcooker.
I would like to know how long to cook them in the slowcooker. ?
Hi Char
The pork chops should cook for about 6 hours on low in the crock pot.
Thanks for visiting!
