This is one of my favourite one dish meals, since it is very easy to make. The portions size is also simple to adjust.
There are no spices listed in the recipe as the seasoning comes from the sausages that you use. Make sure you use a good meaty Italian or Farmer sausage, not those little breakfast links. The pre-smoked fully cooked sausages don't work in this recipe as well as the raw sausages do. As far as the peppers go use any combination of colours or types that you like - this recipe is cheap AND easy. If you like a little kick, add in a sliced jalapeno pepper.
Sausages, Potatoes and Peppers. Serves 3
1.5 lbs (4 medium sized) of potatoes, scrubbed, peeled if you like them better that way
1 medium onion, thinly sliced
1/2 medium sweet red pepper, seeded and sliced
1/2 medium green pepper, seeded and sliced.
1 tsp Kosher salt (regular table salt will work, but use about 3/4 tsp or to taste)
3 Tbsp. olive oil
6 sausages (approx. 1 lb), any flavour - I suggest a spicy or mild Italian sausage, or an herb and garlic sausage
Preheat oven to 375 degrees. Line an 8 by 12 or 9 by 13 casserole dish with foil for easy cleanup.
Scrub and cube the potatoes, or slice into medium thick (1/4 inch) rounds and quarter them. Put them into the casserole, sprinkle with half of the salt and drizzle with 2 Tablespoons of the oil. Put into the oven while you are slicing the peppers and onions.
Seed and slice the peppers. Slice the onion. Unwrap the sausages. The potatoes should have enough of a headstart at this point, but don't work too hard. You want the peppers to have some time to get started.
Take the potatoes out of the oven. Add the onions and peppers to the potatoes and lay the sausages over the top of everything. Prick the sausages with a fork. Drizzle with the remaining olive oil, sprinkle on the last of the salt. Bake for about 1 hour.
I followed directions exactly except i sprinkled some extra spices on the onions and peppers and used hot sausage. I'll let you know shortly how it all works out!

Hi Christina!
I just made this myself last night for supper. I really like it with spicy Italian sausages, but my kids don't agree with that.
