Baked breaded chicken breasts were really good. Bone-in skin on chicken breasts were on sale at the grocery store, so I needed something fairly easy to do with them. There is a long cooking time, but it was great for me - time enough to get the chicken in, go play at the park, and come home to a great supper.
My bread crumbs were made from frozen slices of homemade whole wheat bread. You can use purchased dry bread crumbs, but you can dry out some bread while you're preheating your oven, and just 'crumb' them in the food processor. Any leftovers can be stored in the freezer, or dried out completely and stored in your pantry.
Baked Breaded Chicken Breast
Serves 2 (or 1 adult and three small children)
1 to 1.5 hours at 350*
2 large bone-in chicken breasts
1/4 cup breadcrumbs, fresh or dried
1/4 cup parmesan cheese
1/2 tsp. salt
pinch of garlic powder
1 tsp Herbs of Provence OR Herbs of Tuscany OR Italian seasoning
1/2 tsp parsley
1/4 cup margarine or butter, melted
Mix first 7 ingredients together. Dip Chicken into melted butter, then coat with crumb mixture. Bake at 350* for 1 to 1.5 hours, until juices run clear.


Sounds good. Quick and easy - great for a bachelor!
