Here is a favourite, very easy brownie recipe that I use. I can put it together in less than 10 minutes, bake for less than 20 minutes after my supper is cooked, and the kids have dessert for school the next day.
This brownie recipe gets that shiny, crackley top on it that I used to think only came from a boxed mix. I'm not sure why this recipe works where others have failed, but it does. It's in between a fudgy brownie and a cake-like brownie, but you can adjust the texture a little by baking longer or shorter.
I've combined a few of my favourite recipes, one being an old handwritten hand me down from somewhere, and this is what has come out of it. Actually, all the recipes were almost identical, the only slight variation being in vanilla and salt. The brownie in the photo was made with pastry flour, as one recipe called for, but I usually use all purpose flour and it's fine too.
Brownies.
8x10 pan
350 degrees
16 to 20 minutes
1/2 cup butter, melted
1/2 cup cocoa
1 cup sugar
2 large eggs
1/2 to 1 tsp vanilla extract
2/3 cup flour (I used pastry flour, but all purpose is fine)
1/2 tsp. baking powder
1/2 tsp salt (Kosher salt if you have it)
Melt the butter, either in a saucepan or in a bowl in the microwave. Make sure your pan or bowl is large enough to mix all the ingredients into.
Add in the cocoa, and stir until well blended. Stir in the sugar until fully incorporated. Try eating a few bites because it tastes really yummy. Beat in the eggs until completely mixed. Add vanilla and stir.
Pour the flour on top of the cocoa mixture, sprinkle the salt and baking powder over top. Blend it in to the cocoa/sugar mixture, mixing until well blended. Pour into a greased 8x10 inch pan, and bake in a 350 degree oven for about 17 minutes, 15 or 16 for fudgier brownies, 18 to 20 for more cake like brownies.
Frost with your favourite icing, if you'd like.
